The beef soup between Bill Gates and Elon Musk doesn't seem to be simmering down any time soon!  The two had a small online spat during the pandemic in 2020 but it seems that engine has revved up again recently when Bill Gates sat down with Bloomberg to discuss his climate tech investments and solutions.  These two men have tremendous influence, intelligence and resources that, when combined in partnership, could do so much good for the world.  The world will never know why the two businessmen choose to keep a distance.  It's actually a bit pitiful and kind of like watching a father and son throw digs at the other every so often.  They probably could learn a fair amount of knowledge from each other if they were to put their small differences aside. Easy Peasy Organic Coconut Chia Pudding Parfait

Ingredients 1 cup 365 Oat Milk (Non-GMO) 4.5 Tablespoons Raw Organic Chia Seeds 2 Tablespoons Organic Agave Nectar Dash of Himalayan Pink Salt Whipped cream for topping (use non-dairy whipped cream if vegan) For pudding base (1) 3.4 oz package instant coconut pudding  2 tablespoons of Organic Agave Nectar 1 1/4  cup of milk of choice (use non-dairy milk if vegan) Pudding Base Directions  1.) Pour contents of instant pudding into medium sized mixing bowl. 2.) Pour in 1  1/4 cup of the milk of your choice.  Note* If using non-dairy milk, coconut or almond milk will yield a thicker pudding.   3.) Whisk pudding mix and milk for 2-3 minutes until pudding thickens.    4.) Set in the refrigerator for 5-6 hours or leave overnight   Chia Pudding Directions 1.) There’s been a recent shift in the vegan meat market to incorporate a beneficial part of mushroom—mycelium. Mycelium is the hidden root-like structure of fungi that is found in the soil underneath it.  Mycelium consists of a network of thin fungal strands called hyphae. The mycelium provides nutrients and digestive enzymes to its host source.  While on the prowl for the best vegan bacon, I came across a brand that I’d never seen before.  MyBacon produces a farm grown mycelium plant-based bacon.  The Challenge of Finding a Good Vegan Bacon     When I saw the brand at Whole Foods, I automatically thought highly of its packaging which displayed pictures of the juicy looking vegan bacon that truly resembled real bacon. Daily Harvest took the superfood and health food industries by storm.  Every time you came across an ad in 2019-2020, it was for a Daily Harvest product.  Influencers and youtubers promoted Daily Harvest with all that was within them.  Some bragged how they loved the convenience of Daily Harvest and sold the masses on the idea that one could consume healthy food without having to do the work of sourcing and preparing it themselves. The new meatless steak by Beyond Meat is a hot item.  I can count at least two times where I intended to purchase Beyond Meat’s new meatless steak and it was completely out of stock in both stores.  I am going to give you the real deal nitty gritty about Beyond Steak.   When I first heard about Beyond Meat’s new steak and looked at a picture of the package, I thought, “hmmmm….will this be similar to the taste of Gardein’s beefless tips?" One day after the last Green News Guide article was written, Queen Elizabeth II passed away peacefully on September the 8 th .  I always thought that the Queen would live past the age of 100 like her mother.  The Queen had been visibly getting more frail since the death of her husband. Even though we all know she was up there in age, it comes as a shock because she was just seen appointing the new Prime Minister Liz Truss two days prior.  It goes to show that nothing lasts forever  and what’s here today can be gone tomorrow.     Queen Elizabeth II was blessed to have the longest reign of all monarchs past and present. Last year, the Dr. Oz show spearheaded a 21 day vegan challenge experiment to examine the effects that going meat free had on people’s bodies.  Four meat and dairy loving women participated in the challenge. Before they began the challenge, the women were ordered to go to bio reference labs for blood work to determine their initial blood pressure, weight and cholesterol levels. The women experienced some challenges as the foods that they usually ate were swapped out for a meatless substitute.   One woman had an issue with the taste of the dairy free half and half that she started using in her coffee while another experienced a challenge preparing food separately for her family who are meat eaters.  By week three, the women began experiencing changes in their bodies rather quickly.  One woman experienced significantly less aches and pain, more energy and weight loss.
